Summer Fixins'


Summers are filled with sun, family picnics, fresh fruit from the orchard and produce from the garden. 

My childhood is filled with fond memories of yummy fresh garden meals, courtesy of the family garden and mother! It was not summer without eating a B.L.T. (bacon, lettuce, tomato) sandwich. Throw in a fresh picked corn on the cob and tree ripened peaches, and you had the most delicious meal ever! Perfect for a hot, lazy, summer day.

I have enjoyed this traditional simple summer fixin' for over 50 years. I grew up on it, my kids grew up on it, my grandchildren are growing up on it. The hubs just got back from Europe a couple of days ago. This was our first lunch together. Oh.... yummmm! 

Directions:

B.L.T.

While frying some bacon, slice a fresh garden tomato, tear some lettuce, and toast some bread of your choice. 

Spread mustard and light mayo on toast.

Add veggies and bacon.

Variation: substitute basil for lettuce (nice tasting surprise!)

Corn on the Cob

Put a young, tender cob of corn in a pan of boiling water and cook just until tender (about 8-10 minutes)

Spread on margarine (we like Smart Balance), and salt and pepper to taste.

Fresh Sliced Peaches

Peel peaches.

Slice peaches into bowl. Sprinkle on some sugar, if desired. Let sit for awhile. It makes the most delicious sweet peach juice ever!

    I love BLT's but have never heard of putting mustard along with the mayo! Sounds yummy. Definitely will try.
    A childhood recipe that I still make: sweetened cottage cheese filled crepes. (We just called them cottage cheese pancakes, because pancakes in our house were always crepe thin. That's just how my mother made them, passed down from her mother.
    We just had a get together at my brother's house in Virginia. And the request was for cottage cheese pancakes. We all hadn't had them in years. I made them and my niece said, "They taste just like Grandmom's." I was SO happy!

    1. I just love it when an old, timeless recipe shows up to please the crowd it's serving. Food is a great memory trigger! I think I'm going to have to try your recipe. I love crepes and I love cottage cheese. It sounds like a delightful combination.

  3. I love summer time too, the food tastes so good picked fresh. I've been making "garden soup" once a week. That's where you just pick your favorite veggies, dice and boil them together and then put them in a cheese base soup. I love it. I love BLT's too. I'm glad Dave is back.

    1. I think I might try my hand at making garden soup. Anything fresh picked from the garden is going to be so good!

      Guess what? Dave is back... for 1 week. He goes back to Germany on Sept. 2nd, for 2 1/2 months to train the next guy coming in. I wonder why that did not surprise me. Stinker!

  5. The BLT definitely reminds me of one of my mom's home cooked meals. I never liked the bacon or tomato so when she fixed mine it was just an L.

    I like them now though!
